Grilled Oysters with Spicy Herb Butter
Ingredients
- 2 sticks butter, softened
- ½ c. chopped fresh herbs (oregano, cilantro, parsley, basil, lemon, thyme, tarragon, etc.—choose your favorite)
- Tabasco, to taste
- Sea salt, fresh black pepper
- 3 dozen medium fresh oysters (try to get the shells or use ramekins)
Instructions
- Heat your grill.
- In food processor, pulse the butter with selected herbs, Tabasco, salt and pepper (to taste). I like mine spicy.
- Transfer herb mixture to a sheet of plastic wrap and roll it into a 2” thick log.
- Refrigerate the herb butter until slightly firm. Slice roll into 35 even pats.
- Place the oysters on a hot grill, flat-side up.
- Cover grill and cook until oysters open up, this takes 3-5 minutes, depending on heat.
- With tongs, transfer oysters to a platter, trying to keep liquid inside.
- Quickly remove top shell and loosen oysters from bottom shell.
- Top each oyster with a pat of herb butter and return to grill.
- Cover grill and cook until butter is mostly melted and oysters are hot, about 1 minute.
- Serve right away.
Notes
*****If you have shucked oysters, place them in ramekins that have been sprayed with PAM. Place under broiler for about 1-3 minutes, turn once. Place pat of herb butter on top and return to broiler and cook until bubbly. (Do not overcook—will make oysters tough.) You can also do these on an open grill in your kitchen and just cook oysters on the grill with no shells or ramekins. There are many ways to prepare this dish.
