Green Beans with Eggs, Chiles and Cilantro
1 lb. green beans, cut into 2” pieces
1 T. butter
1 T. olive oil
1 small onion, finely chopped
5 large eggs, lightly beaten
Salt and black pepper to taste
1 c. chopped cilantro (if you do not like cilantro, use parsley)
2 T. chopped walnuts
1 T. minced garlic
2 small jalapenos, seeded and minced
2 small red chile, seeded and minced
½ t. dill seeds
1. In saucepan of boiling salted water, cook beans until tender, about 5 minutes. Drain and cool. Transfer to bowl.
2. In large nonstick skillet, melt butter in the oil.
3. Add onion and cook, stirring until softened.
4. Add eggs and season. Cook over moderate heat, stir, until eggs are scrambled.
5. Add eggs to beans.
6. Stir in cilantro, walnuts, garlic, jalapeno, red chile and dill seeds. Season to taste.
