Greek Yogurt Chunky Chicken Salad
Ingredients
- 1 whole roasted chicken (store bought or home-made), deboned and shred or chop the chicken (need about 12-16 oz. of meat)
- ½ red onion, chopped
- ½ green apple, chopped
- ½ red apple, chopped
- ½ c. Craisins or dried cranberries
- 12 green grapes, halved
- 12 purple grapes, halved
- ½ roasted almond slivers
- 2 c. Greek plain yogurt
- ¼ c. fresh lemon juice
- Kosher salt, black pepper, garlic powder, to taste
- Tabasco, to taste, optional
Instructions
- Remove the meat from the chicken (discard bones, skins, etc.).
- Shred the chicken or cut into bite size pieces and place in a bowl.
- Add to the chicken the red onion, apples, Craisins, grapes and almonds.
- Mix well.
- Add the lemon juice and mix again.
- Add the yogurt, ½ c. at a time, mix well. Keep adding until you get the consistency you like.
- Season with salt, pepper and garlic powder.
- Add Tabasco to taste if desired. Mix well.
- Serve stuffed in tomatoes or avocados or have a nice sandwich.
