Grammie's Sunny Side- Up Eggs with Tomatoes and Bell Peppers
Ingredients
- 4 large eggs
- PAM
- Olive oil
- Salt, black pepper, garlic powder
- 2 large tomatoes, sliced (not too thin)
- Red, orange, yellow, green bell peppers, sliced into rings (use as much as you need or like)
- Whole wheat English muffin or favorite bread
Instructions
- In a large non-stick skillet, spray with PAM and then drizzle with olive oil.
- Over medium heat, sauté the bell peppers until crisp/tender. Season. Push to the outside of the skillet.
- Lay the tomato slices on top of the bell peppers and let heat for about 1-2 minutes.
- Gently crack eggs in the center of the skillet. Once the egg whites become solid, with a spatula, cut the eggs into 4 individual servings (the eggs will run together when cracked, so you need to separate them). Season the eggs. If you want the yolks to be more solid, flip the eggs and cook for about 30 seconds.
- Place a toasted whole wheat muffin on serving plate. Top with bell peppers and tomatoes and top with egg. Serve.
Notes
*****A nice addition is a piece of Canadian bacon or ham.
