Good Old Fashion Roasted Chicken
Ingredients
- 1 (2 ½-3 lb.) whole chicken
- 8-10 cloves of garlic
- 8 oz. good quality smoked bacon
- 2-4 sprigs of fresh rosemary
- Salt/red/black pepper/garlic powder
- 1 large Vidalia onion, diced
- 3 large carrots, diced
- 3 large celery stalks, diced
- 8-10 small Yukon gold potatoes, cut in half
- 2 sprigs of fresh sage, garnish
Instructions
- Preheat oven 325. Peel and mash garlic cloves.
- Insert garlic, bacon and rosemary under the skin under the breasts part.
- Heavily season chicken inside and outside with salt, red/black pepper and garlic powder.
- Place the onion, carrots, celery and potatoes in 12x9” roasting pan. Place chicken on top of the veggies.
- Roast 1 ½ hours or until chicken leg bone yields to a pull.
- Take some of the juice from the pan and serve over the chicken with the veggies and garnish with leaves of fresh sage.
