May 14, 2013: Good Morning Foodies! I just wanted to bring to your attention an organization called, GIRLS ON THE RUN! This past Sunday, The Morning Advocate of Baton Rouge, featured these most amazing gals. I was so surprised and so proud that my GRAND PEEP, SAVANNAH, was on the cover of the magazine. Her mom is running right behind her—very nice support! This program helps educate and empower girls, starting at a young age, and to help with things like peer pressure, bullying, living healthy and taking care of yourself, mentally and physically. It also teaches them to be independent women and productive members of society, while it incorporates running, to top it off. HATS OFF TO THE FOUNDERS OF SUCH A WONDERFUL PROGRAM FOR THESE UP AND COMING YOUNG LADIES! Getting back to food! Today, take note of the butternut squash. I just love this veggie. Now, that you can get it all diced up, and in a steamer bag, there is no excuse not to try it. The two recipes today, I made in one day. The first one, the squash was used straight up as a veggie. Then, I took the veggie and used it as a base for shrimp and linguini. You will see in the second recipe that even before you make it into a sauce for the shrimp, it can be served as a soup. So actually, you get three recipes from one veggie. Give it a try! It is so delicious and light. Have a great day!
