Ingredients
  • 2 lbs. fresh mustard greens
  • 1 T. olive oil
  • 1 c. chopped Vidalia onions
  • 2 T. minced garlic
  • 1 c. chopped red bell pepper
  • ½ c. veggie or chicken broth
  • 1 T. cider vinegar
  • 2 t. sugar
  • Salt, black pepper
Instructions
  1. Remove stems and any wilted leaves from greens.
  2. Stack several leaves. Roll up. Cut crosswise into 1” slices. Repeat with remaining leaves.
  3. Heat oil in large saucepan over medium heat.
  4. Add onion and garlic.
  5. Cook and stir until onions are tender.
  6. Stir in greens, bell pepper and broth.
  7. Reduce heat to low.
  8. Cover and cook 20-25 minutes or until greens are tender, stirring occasionally.
  9. Combine vinegar and sugar in small bowl. Stir to dissolve sugar.
  10. Stir into greens and season with salt and pepper.
  11. Remove from heat and serve.
