Garlicky Grilled Sweet Potatoes
Ingredients
- 6 large yams
- Kosher salt
- ½ c. olive oil
- 8 garlic cloves, minced
- 1 T. finely chopped fresh thyme leaves
- ½ t. red chili flakes/black pepper/cumin
- ¼ c. finely chopped fresh parsley
Instructions
- Place yams in large pot of cold water. Season with 3 T. salt and cook until tender, but still firm. Takes 12-15 minutes. Drain and let cool slightly.
- Heat a grill to high (outside) or grill pan (inside).
- Heat 2 T. of olive oil in small sauté pan on the grill outside. Add garlic, thyme, chili flakes, pepper and cumin. Cook until garlic is just soft. Remove from heat.
- Slice each potato in half lengthwise, then slice each half into 3 or 4 wedges, depending on size.
- Brush the wedges with rest of olive oil and season with salt. Grill until lightly golden brown and just cooked through. This should take 6-8 minutes.
- Remove to a serving platter and toss with garlic sauce and chopped parsley. Add more seasoning if needed.
