Frozen Chocolate Covered Banana Pops
Ingredients
- 4 medium ripe but firm bananas
- 8 wooden craft sticks or popsicle sticks
- ½ c. chopped nuts like salted peanuts, walnuts, pecans, etc.
- 8 oz. good quality dark chocolate (60-70 percent cocoa solids), chopped
Instructions
- Peel, then cut each banana in half crosswise and insert the wooden stick into each half.
- Place on a tray, cover with plastic wrap and place in freezer until frozen.
- Place the chopped nuts in a shallow dish.
- Melt chocolate in top of double boiler over slightly simmering water, over lowest heat, stirring frequently.
- Pour melted chocolate in tall glass.
- Dip each frozen bananas into chocolate, either halfway or all the way, turning to coat it.
- Immediately roll in nuts.
- Place on tray covered with wax paper.
- Serve immediately or wrap in plastic wrap and freeze up to 2 weeks.
