Fried Potato Cakes
Ingredients
- 1 lb. potatoes or 2 c. potatoes that have been boiled and mashed
- 2 green chilis, or any mild type pepper that you can get, seeded and chopped
- 1 t. sea salt
- 1 t. red pepper
- 1 T. coriander leaves, chopped
- 3 T. finely chopped onion
- Canola oil for frying

Instructions
- Boil potatoes in salted water (peeled or unpeeled). Drain and mash.
- Mix with chili pepper, salt, red pepper, coriander and onion. Taste for seasoning.
- Form into small balls and flatten with the palm of your hand.
- Heat oil for shallow frying until hot. Fry the cakes for 1-2 minutes on each side or until golden. Drain on paper towel.
- Serve with a nice chutney.
Notes
******You can make ahead of time and place on baking sheet lined with wax paper and refrigerate until ready to fry. Let sit at room temperature about 10 minutes.
