Fresh Sweet Corn Succotash Gratin
Ingredients
- 4 T. butter
- 1 c. diced Vidalia onion
- 1 T. minced garlic
- 3 c. fresh corn kernels
- 8 oz. fresh green beans, trimmed, bias-sliced
- 1 red bell pepper, diced
- 1 c. frozen shelled edamame, thawed
- Salt and red pepper to taste
- 2 T. flour
- 2 eggs
- 1 c. heavy cream
- 1 c. shredded Parmesan, divided
- ½ c. sliced green onions
- ½ c. panko bread crumbs
- 1 T. extra virgin olive oil
Instructions
- Preheat oven 400.
- In large skillet, melt butter. Add onions and garlic and cook until softened.
- Stir in corn beans, bell pepper, edamame. Season. Cook until veggies are soften and liquid releases and evaporates, 8-10 minutes.
- Stir in flour and cook 1-2 minutes. Cool slightly.
- Whisk eggs and cream in large bowl.
- Stir in cooled veggies along with ½ c. parmesan and green onions.
- Place in 2 qt. baking dish that is sprayed with PAM.
- Combine panko, oil and remaining parmesan. Sprinkle over top of casserole.
- Bake until filling is set and top is golden brown, 20-30 minutes.
