Fresh Green Bean and Creole Tomato Salad with Dressing
Ingredients
- 2-3 lbs. of green and yellow string beans
- ¼ c. extra virgin olive oil
- 1 medium red onion, thinly sliced
- 1 shallot, minced
- 3 T. chopped tarragon or your favorite herb
- ¼-1/2 c. balsamic vinegar
- Salt, black pepper
- 1 pint cherry tomatoes, halved (if you can get varied colors)
Instructions
- In large pot of boiling salted water, cook beans until just tender, 3-4 minutes. Drain and spread on baking sheet to cool. Pat dry.
- In bowl, whisk olive oil, red onion, shallots, tarragon, salt and pepper.
- Drizzle in as much of the vinegar that suits your taste. Mix well.
- In a large bowl, combine the beans and tomatoes.
- Add the dressing and toss.
- Taste for more seasoning.
- Serve at room temperature or chill.
