  • ¼ c. red wine vinegar
  • 3 T. fresh lemon juice
  • 3 T. olive oil
  • 1 T. minced fresh garlic
  • ½ t. dried oregano
  • Salt, black pepper
  • 1. Whisk together all ingredients and season to taste. Set aside until ready to use.
  • 12 chicken tenders, seasoned with salt, red/black pepper
  • 4 (6”) pitas, brushed with olive oil and seasoned with salt, black pepper
  • 5 c. chopped romaine hearts
  • ½ c. packed fresh mint, rough chop
  • ¼ c. packed fresh dill, rough chop
  • 4 boiled eggs, halved
  • 1 ½ c. halved cherry tomatoes
  • 1 c. crumbled feta cheese
  • ½ c. pitted Kalamata olives
  • ½ c. thinly sliced red onion
  • ½ c. sliced pepperoncini
  • ½ c. seeded and sliced English cucumber
  1. Preheat grill to medium high. Brush grill with vegetable oil.
  2. Toss chicken with 2 T. of vinaigrette, then grill, covered until cook through, 2-3 minutes per side.
  3. Place chicken on plate, tent with foil and let rest 3 minutes.
  4. Chop tenders, toss with any of the juice from the chicken.
  5. Reduce grill to medium.
  6. Grill pitas until marks appear. Cut pitas into 6 wedges.
  7. Combine lettuce, mint and dill and arrange on large serving dish.
  8. Arrange eggs, tomatoes, feta, olives, red onion, pepperoncini, cucumber, chicken and pitas on same dish.
  9. Drizzle with vinaigrette over the top.
