Fresh and Easy Greek Cobb Salad
Ingredients
- VINAIGRETTE:
- ¼ c. red wine vinegar
- 3 T. fresh lemon juice
- 3 T. olive oil
- 1 T. minced fresh garlic
- ½ t. dried oregano
- Salt, black pepper
- 1. Whisk together all ingredients and season to taste. Set aside until ready to use.
- 12 chicken tenders, seasoned with salt, red/black pepper
- 4 (6”) pitas, brushed with olive oil and seasoned with salt, black pepper
- 5 c. chopped romaine hearts
- ½ c. packed fresh mint, rough chop
- ¼ c. packed fresh dill, rough chop
- 4 boiled eggs, halved
- 1 ½ c. halved cherry tomatoes
- 1 c. crumbled feta cheese
- ½ c. pitted Kalamata olives
- ½ c. thinly sliced red onion
- ½ c. sliced pepperoncini
- ½ c. seeded and sliced English cucumber
Instructions
- Preheat grill to medium high. Brush grill with vegetable oil.
- Toss chicken with 2 T. of vinaigrette, then grill, covered until cook through, 2-3 minutes per side.
- Place chicken on plate, tent with foil and let rest 3 minutes.
- Chop tenders, toss with any of the juice from the chicken.
- Reduce grill to medium.
- Grill pitas until marks appear. Cut pitas into 6 wedges.
- Combine lettuce, mint and dill and arrange on large serving dish.
- Arrange eggs, tomatoes, feta, olives, red onion, pepperoncini, cucumber, chicken and pitas on same dish.
- Drizzle with vinaigrette over the top.
