Ingredients
  • 1 (8.5-oz.) bag Barilla Ready Rotini Pasta (60 second in microwave)
  • 1 medium Vidalia onion, thinly sliced
  • 1 lb. Campari tomatoes, halved
  • Olive oil
  • Salt, black pepper
  • 3-4 sprigs of fresh oregano, pull leaves off stems
  • 1 (11 oz.) jar Gia Russa Sweet Pepper Bruschetta sauce (I usually just look in the Italian section of a grocery store and look at what is new in sauces in a jar.) Like to try something different each time.
  • 1 c. canned Mexicorn, drained
  • Freshly grated parmesan cheese
Instructions
  1. In a large skillet, drizzle bottom with olive oil and place over medium heat.
  2. Add the onion and saute until tender.
  3. Meanwhile, follow instructions on bag for the pasta. This brand places it in microwave for 60 seconds. It was excellent.
  4. Add the pasta to the onions and the sauce of your choice.
  5. Add the corn and season with salt and pepper. Stir to mix and heat through.
  6. Add the oregano and cut tomatoes to garnish and slightly heat through.
  7. Serve with grated parmesan cheese.
Notes
****You can add any type of cooked meat, chicken or seafood to the dish. You can also add fresh veggies such as broccoli, zucchini, sugar snaps, spinach, etc. Just add what you like. It is a quick and easy meal all in one pan. Little clean up!
