Flavorful and Crunchy French Toast
Ingredients
- 8 slices brioche bread, cut 1” thick
- 6 c. corn flakes
- 3 eggs
- 3 egg yolks
- 1 ½ c. half and half
- 3 T. light brown sugar
- 4 t. vanilla
- 1 T. ground cinnamon
- 1 T. orange zest
- ½ t. salt
- 2 T. butter
- 2 T. oil
- ½ c. heavy cream
- 1 T. maple syrup
- 1 t. orange zest
- Pure maple syrup
Instructions
- Preheat oven 350.
- Set wire rack on baking sheet and arrange bread slices on rack.
- Toast oven until golden brown, 6-8 minutes per side.
- Remove from oven and reduce oven to 250.
- Crush corn flakes to look like bread crumbs. Place in shallow dish.
- Whisk together eggs, yolks, half and half, sugar, vanilla, cinnamon, zest and salt.
- Soak bread in egg mixture, about 2 minutes per side.
- Coat bread in corn flakes on both sides, pressing to adhere, gently shake off excess.
- Melt 1 T. butter with 1 T. oil in large cast-iron skillet or griddle over medium heat.
- Cook 4 slices until golden and crispy, 2 minutes per side.
- Transfer to baking sheet and keep warm in oven.
- Wipe out skillet and repeat process with remaining butter, oil and bread.
- Whip cream, 1 T. maple syrup and orange zest in chilled bowl with hand mixer until stiff peaks form.
- Serve toast with whipped cream and maple syrup.
