Ingredients
  • 8 slices brioche bread, cut 1” thick
  • 6 c. corn flakes
  • 3 eggs
  • 3 egg yolks
  • 1 ½ c. half and half
  • 3 T. light brown sugar
  • 4 t. vanilla
  • 1 T. ground cinnamon
  • 1 T. orange zest
  • ½ t. salt
  • 2 T. butter
  • 2 T. oil
  • ½ c. heavy cream
  • 1 T. maple syrup
  • 1 t. orange zest
  • Pure maple syrup
Instructions
  1. Preheat oven 350.
  2. Set wire rack on baking sheet and arrange bread slices on rack.
  3. Toast oven until golden brown, 6-8 minutes per side.
  4. Remove from oven and reduce oven to 250.
  5. Crush corn flakes to look like bread crumbs. Place in shallow dish.
  6. Whisk together eggs, yolks, half and half, sugar, vanilla, cinnamon, zest and salt.
  7. Soak bread in egg mixture, about 2 minutes per side.
  8. Coat bread in corn flakes on both sides, pressing to adhere, gently shake off excess.
  9. Melt 1 T. butter with 1 T. oil in large cast-iron skillet or griddle over medium heat.
  10. Cook 4 slices until golden and crispy, 2 minutes per side.
  11. Transfer to baking sheet and keep warm in oven.
  12. Wipe out skillet and repeat process with remaining butter, oil and bread.
  13. Whip cream, 1 T. maple syrup and orange zest in chilled bowl with hand mixer until stiff peaks form.
  14. Serve toast with whipped cream and maple syrup.
