Flavorful Crockpot Carrot-Ginger Soup
Ingredients
- 2 lbs. fresh carrots, ends trimmed and cut into 1” slices
- 6 green onions, chopped
- 3 T. minced garlic
- 3 T. chopped fresh ginger
- 1 t. curry powder
- 2 ½ c. chicken broth
- 2 c. water
- ½ c. heavy cream
- Salt, black pepper
- Plain yogurt, optional
- Fresh chopped parsley, optional
- ½ lb. peeled, deveined cooked shrimp, chopped
Instructions
- Combine carrots, green onions, garlic, ginger, curry, broth and 2 c. water in crock pot.
- Cover and cook on LOW until carrots are tender, 6-8 hours.
- Remove from heat and let cool slightly.
- With a hand-held immersion blender, puree soup.
- Stir in heavy cream, season with salt and pepper.
- Cover and cook on LOW until heated through, 15-20 minutes.
- Ladle hot soup into bowls.
- Top with dollop of yogurt, sprinkle of parsley and place shrimp right on top and serve.
