Fantastic Crawfish Bread Pudding

FANTASTIC CRAWFISH BREAD PUDDING
3 eggs
1 t. salt
1 t. black pepper
4 c. half and half
1 lb. loaf soft French Bread or Brioche
Vegetable oil
1 onion, chopped
1 bell pepper, chopped
2 celery stalks, chopped
3 T. minced garlic
¼ lb. tasso
1 lb. crawfish tails, rough chop
3 green onions, sliced
Fresh basil, garnish

  1. Preheat oven 325.
  2. In large bowl, add eggs, salt and pepper. Whisk well.
  3. Whisk in half and half.
  4. Slice bread into 1” chunks and add to egg mixture. Mix well.
  5. Allow to rest for 30 minutes to absorb the liquid part.
  6. In large skillet over medium heat, drizzle with oil.
  7. Add onions and saute until soft.
  8. Add bell pepper, celery, garlic and tasso. Saute for 5 minutes.
  9. Remove from heat.
  10. Add crawfish and green onions. Mix well. Remove from heat and let cool 10 minutes.
  11. Add to bread mixture, stir until combined.
  12. Pour mixture into greased 13×9” baking dish.
  13. Bake 50-60 minutes until bread pudding has set.
  14. Remove from oven and let rest 10 minutes before serving.
  15. Garnish if desired.
