Fancy French Toast Muffins
Ingredients
- 3 c. flour
- 1 T. baking powder
- 1 t. salt
- ½ t. ground fresh nutmeg
- 1 c. sugar
- ⅔ c. shortening
- 2 eggs
- 1 c. whole milk
- COATING:
- 2 sticks butter
- 1 ½ c. sugar
- 1 T. ground cinnamon
Instructions
- Preheat oven 350.
- Lightly grease 12 muffin cups.
- In large bowl, stir together flour, baking powder, salt and nutmeg. Set aside.
- In separate large bowl, cream together sugar and shortening.
- Add eggs and mix well.
- Alternating ⅓ flour mixture and ⅓ of milk to the creamed mixture.
- Beating well after each addition.
- Fill the muffin cups ⅔ full. Bake until golden, about 20-25 minutes.
- Remove muffins from the pan and set aside.
- Make the coating: Melt butter in a bowl. In another dish, combine sugar and cinnamon.
- Dip the warm muffins in the butter, coating all around.
- Then roll the muffin in the sugar/cinnamon mixture. Really coat well.
- Serve!!!!!!!!!!!!!
