Family Favorite Pastalya
Ingredients
- 3 T. butter or olive oil
- 1 lb. boneless skinless chicken breast, cut into 1” pieces
- 1 lb. andouille or smoked sausage, cut into ½” rounds
- 2 c. chopped onion, bell pepper mix
- 2 c. chopped fresh tomatoes
- 1 c. chicken broth
- 3 T. minced garlic
- Creole seasoning to taste
- 1 lb. linguine, cooked according to package directions, kept warm
- ¼ c. chopped green onion
Instructions
- In large Dutch oven, melt butter or heat olive oil on medium heat.
- Add chicken and sausage, cook until lightly browned.
- Remove and set aside.
- Add the chopped onion mix to the pot and cook until soft, stirring occasionally.
- Add the chicken and sausage back to the pot.
- Add the tomatoes, broth, garlic and Creole seasoning.
- Bring mixture to a boil, then reduce to medium, cover and simmer until chicken is cooked through
- Stir in pasta.
- Season to taste
- Garnish with chopped green onions.
