
Fabulous Fried Pickles

Vegetable oil, for frying
2 c. flour
1/ c. cornstarch
1 T. kosher salt
1 T. black pepper
1 t. paprika
1 t. garlic powder
1 t. onion powder
1 c. buttermilk
1 egg
1 (16-oz.) jar dill pickle chips, drained and patted dry
Ranch Dressing, for dipping
1. In a large cast-iron skillet place ¾” of oil and heat to 375.
2. In a wide, shallow bowl, mix together the flour, cornstarch, salt, pepper, paprika, garlic and onion powders.
3. In a separate wide, shallow bowl, whisk the buttermilk and egg to combine.
4. Place ¼ of the pickle slices in buttermilk mixture and gently stir with fork to coat.
5. Using slotted spoon, drain pickles well, place in flour mixture and toss to combine.
6. Add pickles to skillet and fry until golden brown and crispy, about 2 minutes.
7. Using clean slotted spoon, transfer pickles to paper towel lined plate.
8. Repeat with remaining batches of pickles.
9. Serve immediately with Ranch Dressing, for dipping.
