Eggs in a Basket
Ingredients
- 3-4 eggs
- 3-4 slices of whole-wheat bread
- Soft butter
- 1 large red bell pepper, cut into rings
- 6-8 slices turkey bacon
- PAM
- Salt, black pepper
Instructions
- In a large skillet, spray with PAM and set over low-medium heat.
- Take the bread slices and core a part of the center where the egg is to rest. Leave some of the bread inside the edges of the crust.
- Butter lightly both sides of the bread.
- When skillet is hot, place bell pepper rings in and saute them until they are tender. Then remove and set on a plate.
- Cook the “Microwave Turkey Bacon” or your favorite bacon and set aside.
- When you remove the bell peppers, spray skillet again with PAM.
- Lay the bread slices down.
- Let the bread slightly brown and flip.
- Gently crack the egg and place in the hole in the bread. Watch as the egg starts to set.
- When you like the softness of the egg, gently flip the bread and egg.
- Turn the heat off. It will only take 15-30 seconds for the eggs to finish cooking. If you want your eggs runny, you have to watch and cut off earlier.
- Place the bell pepper rings and turkey slices on top of the eggs and serve.
Notes
*****You can turn the eggs again if you want the egg side up to show or you can immediately serve the eggs in a basket and then garnish with the bell peppers and bacon.
You can also use different bell pepper colors and add mushrooms. Add a little grated cheese adds a nice touch.
