Easy Caprese Pizza
Ingredients
- 12 oz. refrigerated fresh pizza dough or pick one up from a Pizza Place
- 2 c. cherry tomatoes, halved (if you can get the variety colors)
- Olive oil
- 3 T. balsamic vinegar
- 1 T. cornmeal
- 3 T. minced garlic
- 3.5 oz. fresh mozzarella cheese, thinly sliced
- PAM
- Salt, black pepper, garlic powder
- ¼ c. thinly sliced fresh basil leaves
Instructions
- Let refrigerated dough stand at room temperature, covered for 30 minutes.
- Preheat broiler to HIGH.
- Line a baking sheet with parchment paper. Spread the tomatoes on paper. Drizzle with olive oil, toss to coat.
- Broil for 10 minutes or until tomatoes begin to brown.
- Bring vinegar to a simmer in a saucepan. Simmer for 10 minutes or until reduced by half.
- Place pizza stone or heavy baking sheet in oven.
- Preheat oven to 500 (keep pizza stone or baking sheet in oven as it preheats.)
- Roll dough into 14” circle on lightly floured surface.
- Pierce dough liberally with a fork.
- Remove pizza stone or baking sheet from oven.
- Sprinkle cornmeal over the pizza stone or baking sheet.
- Place dough on the stone or sheet. Bake at 500 for 5 minutes.
- Remove from oven.
- Combine oil with garlic. Brush evenly over crust, leaving 1” border.
- Top with tomatoes and cheese.
- Spray border with PAM.
- Bake 12 minutes or until cheese melts and crust is brown.
- Sprinkle with salt, pepper and garlic powder.
- Drizzle with vinegar. Garnish with basil.
- Cut into wedges.
