EASY BREAKFAST CUPS
1 lb. ground turkey sausage or pork sausage
6 eggs, beaten
1 c. egg whites, beaten
½ red bell pepper, diced
¼ c. minced red onion
1 c. grated sharp cheddar cheese
½ c. grated mozzarella cheese
Salt, black pepper
- Brown sausage in a skillet. Be sure to break up the sausage into crumbles. Drain the sausage on paper towels.
- In a bowl, combine the sausage, bell pepper and onion.
- Season with salt and pepper.
- Spray regular muffin pans with PAM.
- Fill muffin pans half way up with meat mixture.
- Combine the eggs, egg whites and cheeses. Season with salt and pepper.
- Pour the egg mixture over the meat mixture.
- Bake at 350 for 20-25 minutes.
- Let rest for 2-3 minutes and remove from muffin pan.
*This should make 12. You can change up cheeses and veggies. These freeze very well. Wrap each individually in saran wrap then foil and place in zip lock bags. To reheat, unwrap, discard the saran wrap. Wrap back in foil and thaw and heat in 325 oven until hot. Can also place thawed cup in microwave.
