Dreamy Turtle Pie

DREAMY TURTLE PIE
CRUST:
2 T. semi-sweet chocolate chips
1 T. butter
1 (9”) pie shell, baked and cooled
CARAMEL LAYER:
20 caramel cubes
¼ c. heavy cream or milk
1 ¼ c. salted peanuts
CHOCOLATE LAYER:
1 c. semi-sweet chocolate chips
2 T. butter
1 (8-oz.) container Cool Whip
GARNISH:
Cool whip
Caramel drizzle, to taste
Peanuts, to taste

  1. CRUST: In microwave safe bowl, melt 2 T. chocolate chips and 1 T. butter in increments of 20 seconds until melted.
  2. Spread the mixture on bottom of pie crust.
  3. Chill the chocolate covered pie crust until set, at least 30 minutes.
  4. CARAMEL LAYER: In microwave safe bowl, melt caramels and cream in increments of 20 seconds until melted, stir often.
  5. Allow this mixture to cool slightly.
  6. Combine peanuts with cooled caramel mixture and pour into pie shell.
  7. Chill overnight.
  8. CHOCOLATE LAYER: In a microwave safe bowl, melt remaining chocolate chips and remaining butter until smooth, about 1 minute.
  9. Let this sit for 15 minutes.
  10. Fold about 1/3 of COOL WHIP into cooled chocolate mixture. Then fold in remaining COOL WHIP>
  11. Spread this mixture over the chilled caramel layer.
  12. Chill pie and let set up overnight.
  13. Garnish pie with COOL WHIP, CARAMELS AND PEANUTS before serving.
