Delightful Crunchy Fudge

DELIGHTFUL CRUNCHY FUDGE
2 c. dark brown sugar, packed
1 c. half and half
½ t. kosher salt
7 T. butter, cut into pieces and divided
1 t. vanilla extract
1 ½ c. powdered sugar
4 (8-oz.) bittersweet chocolate, finely chopped
2 c. cornflakes
Flaked sea salt, for serving
1. Line 8” square pan with nonstick foil, with 2” overhang on two sides.
2. In saucepan, add brown sugar, half and half, salt and 4 T. butter.
3. Warm mixture over medium heat, stir occasionally, until sugar melts and no longer sandy, 4-5 minutes.
4. Place a candy thermometer in pan and bring mixture to gentle boil without stirring until mixture reaches 235 degrees, about 10-12 minutes.
5. Transfer mixture to bowl of electric mixer and stir in vanilla.
6. Mixer on low speed, gradually beat in powdered sugar until smooth and lighter in color, 3-4 minutes.
7. Spread mixture into prepared baking pan.
8. In large bowl, microwave the chocolate and remaining butter, stirring every 30 seconds, until melted and smooth, about 1 ½ minutes.
9. Add cornflakes to chocolate mixture and gently fold until evenly coated.
10. Spoon this mixture on top of fudge.
11. Sprinkle with flaked sea salt.
12. Refrigerate until firm, at least 30 minutes.
13. Use overhangs of foil to lift fudge out of pan.
14. Cut int 1” pieces and serve.
