Delightful Cabernet Pears
Ingredients
- 4 Bosc pears
- 1 (750 ml) bottle Cabernet Sauvignon
- water
- ⅓ c. plus ¼ c. sugar, divided
- 1 stick cinnamon
- 8 peppercorns
- 1 bay leaf
- 3 whole cloves
- 4 sprigs fresh thyme
Instructions
- Peel pears and core from the bottom, leaving stem on.
- Place in large saucepan.
- Pour in wine and add enough water to cover the pears.
- Add ⅓ c. sugar, cinnamon, peppercorns, bay leaf, cloves and thyme.
- Bring to boil. Reduce heat to a simmer.
- Simmer gently, uncovered, 30-40 minutes or until pears are fork tender.
- Remove pears to serving dish.
- Strain 2 c. of poaching liquid into a saucepan.
- Add ¼ c. sugar. Bring to boil.
- Cook 15-30 minutes or until reduced to a sauce.
- Serve over pears.
