Delightful Cabernet Pears

Ingredients
  • 4 Bosc pears
  • 1 (750 ml) bottle Cabernet Sauvignon
  • water
  • ⅓ c. plus ¼ c. sugar, divided
  • 1 stick cinnamon
  • 8 peppercorns
  • 1 bay leaf
  • 3 whole cloves
  • 4 sprigs fresh thyme
Instructions
  1. Peel pears and core from the bottom, leaving stem on.
  2. Place in large saucepan.
  3. Pour in wine and add enough water to cover the pears.
  4. Add ⅓ c. sugar, cinnamon, peppercorns, bay leaf, cloves and thyme.
  5. Bring to boil. Reduce heat to a simmer.
  6. Simmer gently, uncovered, 30-40 minutes or until pears are fork tender.
  7. Remove pears to serving dish.
  8. Strain 2 c. of poaching liquid into a saucepan.
  9. Add ¼ c. sugar. Bring to boil.
  10. Cook 15-30 minutes or until reduced to a sauce.
  11. Serve over pears.
