Delicious Tomato, Bleu Cheese Steak Salad
Ingredients
- 3 T. whole-grain mustard
- 1 T. Worcestershire sauce
- 1 T. balsamic vinegar
- Kosher salt, black pepper
- 1 lb. skirt steak, cut into 3 pieces
- 6 oz. arugula
- 1 pt. cherry tomatoes, halved
- ¾ c. chopped celery
- 3 green onions, chopped
- 4 oz. bleu cheese, crumbled
- 3 T. lemon juice
- ¼ c. extra-virgin olive oil
Instructions
- Heat grill to HIGH (450-500).
- Mix mustard, Worcestershire, vinegar, salt and pepper in a bowl.
- Add steak, tossing to coat.
- Grill steak, turning once halfway through, until done the way you like, 6-8 minutes for medium.
- Let rest, covered with foil for 10 minutes, before slicing.
- Put remaining ingredients in large bowl and toss gently to combine.
- Divide among 4 plates and serve steak over the salad.
