Cynthia's Homemade Date Loaf
Ingredients
- 1 quart chopped pecans
- 1 t. salt
- 2 (8-oz.) container chopped dates
- 1 t. baking powder
- 1 c. sugar
- 3 t. vanilla
- 1 c. flour
- 4 eggs
Instructions
- Preheat oven 400.
- In large bowl, beat eggs.
- Add sugar, vanilla, pecans and dates. Mix well by hand.
- In separate bowl, mix flour, salt and baking powder. Gradually add this mixture to the date mixture. Mix well by hand.
- Spray 13x9” baking pan with PAM.
- Spread mixture into pan.
- Bake for 1 hour. Test with toothpick inserted in center comes out clean. DO NOT OVERBAKE
