Ingredients
  • 2 (3-oz.) packages Ramen Noodle Soup, whatever flavor you prefer, save seasoning packet for dressing
  • ¾ stick butter
  • ¼ c. slivered almonds
  • 2 (12-oz.) bags broccoli cole slaw
  • ¼ c. sunflower seeds
  • 2 chopped green onions, for garnish
  • ¾ c. canola oil
  • ¼ c. light brown sugar
  • ¼ c. apple cider vinegar
  • ¼ c. Dijon mustard
  • 1 ramen noodle seasoning packet
  • Kosher salt, fresh black pepper
Instructions
  1. Put the noodles in a bag and crush them with a rolling pin or kitchen mallet.
  2. Melt butter in large skillet over low heat.
  3. Add the noodles and almonds to skillet and sauté, stirring occasionally.
  4. Meanwhile, whisk together the canola oil, sugar, vinegar, mustard and noodles seasoning packet.
  5. Place the broccoli slaw in a bowl and toss with the noodles, almonds and sunflower seeds.
  6. Pour dressing over salad and toss to coat.
  7. Taste for seasoning.
  8. Garnish with green onions.
Notes
*****Can be made day ahead and refrigerate. If you want to wait and garnish with green onions right before serving.
