Crunchy Air-Fryer Okra

CRUNCHY AIR FRYER OKRA
OKRA:
1 c. yellow cornmeal
2 T. flour
2 t. Creole seasoning
2 eggs
2 T. pickle juice, from a jar
½ lb. okra, halved lengthwise
Nonstick cooking spray
SPICY DIPPING SAUCE:
¼ c. mayo
¼ c. sour cream
2 T. pickle juice
2 t. Tabasco or Sriracha

  1. OKRA: Add cornmeal, flour and Creole seasoning in plastic bag. Seal bag and shake to combine. Whisk eggs and pickle juice in shallow bowl. Add half okra to egg mixture. Let soak 10 minutes.
  2. With slotted spoon let egg mixture drain. Add okra to cornmeal mixture. Seal bag and shake to coat okra.
  3. Transfer breaded okra to air fryer basket that is sprayed with cooking spray.
  4. Cook at 400 for 12 minutes, turning okra halfway through and spray with more cooking spray.
  5. Place cooked okra on rimmed baking sheet and keep warm in 200 degree oven, while cooking rest of okra.
  6. SPICY DIPPING SAUCE: Mix all ingredients and keep chilled until ready to use.
