Crispy Grilled Tomato and Brie Sandwich
CRISPY GRILLED TOMATO AND BRIE SANDWICHES
¼ c. Miracle Whip or mayo
1 T. minced garlic, mashed with pinch kosher salt to make a paste
1 T. fresh lemon juice
Pinch red pepper
4 (3/4”) thick slices ciabatta bread
3 oz. cold brie, thinly sliced
2 small tomatoes, thinly sliced
12 basil leaves, thinly sliced
- In bowl, whisk mayo, garlic paste, lemon juice and red pepper.
- Heat a 12” nonstick skillet over medium heat.
- Lightly spread mayo mixture on one side of each slice of bread.
- Put all 4 bread slices, mayo side down, into skillet and cook until they just start to turn golden, about 2 minutes.
- Divide brie between two of the slices.
- Cook for another 2 minutes more until bread is well browned and brie is soft.
- Remove bread from pan.
- Top brie with tomatoes and basil.
- Spread a little more of the mayo mixture on untoasted side of remaining two slices of bread.
- Season with red pepper.
- Close, slice and serve.
