Ingredients
  • Peanut oil for frying
  • 1 lb. of fresh calamari, cleaned
  • Kosher salt, black pepper, red pepper, garlic powder, to taste
  • ½ c. flour
  • Lemon wedges
  • 1-2 c. fresh or store-bought Marinara sauce or your favorite seafood dipping sauce (with the new Zesty Dipping Sauces and Mayos on the market, I like to switch it up.)
Instructions
  1. Preheat oven 200. Line one baking sheet with paper towels and one with nothing on it.
  2. In a heavy duty pot, pour enough of the oil to come up the sides of pot to 2-3”. Heat to 350. Use a thermometer to check that temperature.
  3. Cut the calamari bodies (sacs) crosswise into ½” wide rings. Cut the tentacles in halves or thirds, depending on how you like them.
  4. Season the cut calamari with salt, peppers and garlic powder.
  5. Place flour into a bowl.
  6. Place half of the calamari in the flour and coat but shake off excess.
  7. Add to the hot oil and cook until golden brown, about 2-3 minutes. Try to maintain the 350 temperature of the oil.
  8. With slotted spoon, remove calamari from the oil and place on paper towels to drain.
  9. Immediately after draining, transfer the cooked calamari to the other baking sheet and place in the oven.
  10. Repeat with remaining calamari.
  11. Transfer calamari to a serving dish along with your favorite dipping sauce and lemon wedges.
