Crispy Fried Calamari
Ingredients
- Peanut oil for frying
- 1 lb. of fresh calamari, cleaned
- Kosher salt, black pepper, red pepper, garlic powder, to taste
- ½ c. flour
- Lemon wedges
- 1-2 c. fresh or store-bought Marinara sauce or your favorite seafood dipping sauce (with the new Zesty Dipping Sauces and Mayos on the market, I like to switch it up.)
Instructions
- Preheat oven 200. Line one baking sheet with paper towels and one with nothing on it.
- In a heavy duty pot, pour enough of the oil to come up the sides of pot to 2-3”. Heat to 350. Use a thermometer to check that temperature.
- Cut the calamari bodies (sacs) crosswise into ½” wide rings. Cut the tentacles in halves or thirds, depending on how you like them.
- Season the cut calamari with salt, peppers and garlic powder.
- Place flour into a bowl.
- Place half of the calamari in the flour and coat but shake off excess.
- Add to the hot oil and cook until golden brown, about 2-3 minutes. Try to maintain the 350 temperature of the oil.
- With slotted spoon, remove calamari from the oil and place on paper towels to drain.
- Immediately after draining, transfer the cooked calamari to the other baking sheet and place in the oven.
- Repeat with remaining calamari.
- Transfer calamari to a serving dish along with your favorite dipping sauce and lemon wedges.
