Creamy Pumpkin Mashed Potatoes

CREAMY PUMPKIN MASHED POTATOES
2 lbs. russet potatoes, peeled and sliced into 2” pieces
1 c. canned pumpkin
2 T. butter, melted
4 oz. cream cheese, softened
¼ c. milk
Salt/pepper to taste
Fresh thyme

  1. In large, covered saucepan, immerse potatoes into boiling salted water. Cook until tender. Drain.
  2. In bottom of mixing bowl, add melted butter and softened cream cheese.
  3. Place drained, hot potatoes on top.
  4. Add milk, salt and pepper.
  5. Mix on low, building up speed to medium, then high for 4-5 minutes, until nearly smooth.
  6. Beat in pumpkin and fresh thyme. Taste for seasonings.
  7. Return to saucepan, heat before serving.
  8. Garnish with butter and fresh thyme.
