Creamy Pumpkin Mashed Potatoes
CREAMY PUMPKIN MASHED POTATOES
2 lbs. russet potatoes, peeled and sliced into 2” pieces
1 c. canned pumpkin
2 T. butter, melted
4 oz. cream cheese, softened
¼ c. milk
Salt/pepper to taste
Fresh thyme
- In large, covered saucepan, immerse potatoes into boiling salted water. Cook until tender. Drain.
- In bottom of mixing bowl, add melted butter and softened cream cheese.
- Place drained, hot potatoes on top.
- Add milk, salt and pepper.
- Mix on low, building up speed to medium, then high for 4-5 minutes, until nearly smooth.
- Beat in pumpkin and fresh thyme. Taste for seasonings.
- Return to saucepan, heat before serving.
- Garnish with butter and fresh thyme.
