Ingredients
  • 1 (8-oz.) package cream cheese, softened
  • ¼ c. sugar
  • 1 (15-oz.) can solid-pack pumpkin
  • 1 (3.4-oz.) package instant vanilla pudding mix
  • 1 T. pumpkin pie spice
  • 1 c. cold milk
  • 2 c. Cool Whip topping, plus extra for layering
  • Crushed chocolate graham crackers or ginger snaps
Instructions
  1. In bowl, beat cream cheese and sugar until smooth.
  2. Add pumpkin, pudding mix and pie spice.
  3. Gradually beat in milk.
  4. Fold in whipped topping.
  5. In parfait glass (about 8 glasses), spoon about ¼ c. of the pumpkin mousse into each dish.
  6. Put a layer of Cool Whip (about ¼ c. also).
  7. Sprinkle a layer of the crumbled graham crackers.
  8. Repeat layers until top of dish is full.
  9. Refrigerate until ready to serve.
