Crawfish Pie Appetizers
Ingredients
- 1 (14.1-oz.) package refrigerated piecrusts
- ½ of (16-oz.) package thick-cut bacon, cut into ⅛” pieces
- 2 c. extra sharp grated cheddar cheese
- ¼ c. chopped fresh chives
- 3 T. flour
- 1 t. salt
- 1-2 t. black pepper
- ½ c. milk
- 2 large eggs
- 8 oz. package crawfish tails, chopped
Instructions
- Preheat oven 375. Unroll piecrusts on lightly floured board.
- Cut 24 (3 ½”) circles from crust and press into 24 mini muffin cups.
- Prick sides and bottom of crusts with fork.
- In skillet, cook bacon until crisp. Drain and crumble the bacon.
- In bowl, combine bacon, cheese, chives, flour, salt, pepper, milk and eggs.
- Whisk to blend.
- Gently fold in crawfish and combine.
- Divide mixture evenly among the crusts.
- Bake until lightly golden and puffy, about 12-15 minutes. Serve warm.
Notes
*****You can semi-bake them, cool and place in zip-lock bags and freeze. To serve, thaw in refrigerator, place in baking dish and cook until hot.
