  • 10 large yellow squash, cut into pieces
  • 1 onion, chopped
  • 1 (8-oz.) carton of sour cream or Greek yogurt
  • 1 t. salt
  • 1 t. dried basil
  • 1 t. red pepper flakes
  • 1 c. soft whole wheat breadcrumbs
  • 1 c. shredded cheddar cheese
  • ¼ c. butter, melted
  • Paprika
  1. Cook squash and onion in boiling salted water 8-10 minutes or until tender.
  2. Drain and mash.
  3. Combine squash, sour cream and the next 3 ingredients. Stir well.
  4. Spoon the squash mixture into greased 2 qt. casserole dish.
  5. Combine breadcrumbs, cheese and butter. Mix well.
  6. Sprinkle over the squash mixture. Sprinkle with paprika.
  7. Bake, uncovered at 300 for 25-30 minutes or until thoroughly heated.
