Cooling Watermelon Punch
COOLING WATERMELON PUNCH
1 c. water
½ c. sugar
6 c. cubed and seeded watermelon
1 (12-oz.) can frozen lemonade concentrate, thawed
2 c. unsweetened pineapple juice
1. In small saucepan, bring 1 c. water and sugar to boil over low heat.
2. Stir until sugar dissolves.
3. Remove from heat and let cool completely.
4. In a blender, combine watermelon and sugar syrup. Process until smooth.
5. Strain mixture through a wire mesh sieve into large pitcher.
6. Press down on watermelon to extract liquid. Discard solids.
7. Stir lemonade and pineapple juice into pitcher.
8. Serve over ice.
