Comforting Chicken, Corn and Asparagus Chowder

COMFORTING CHICKEN, CORN AND ASPARAGUS CHOWDER
Olive oil
1 c. cut fresh asparagus (1” pieces)
1 medium onion, finely chopped
2 T. flour
Salt, pepper, garlic powder to taste
1 (14 ½-oz.) can chicken broth
½ c. half and half
2 c. cubed cooked chicken breasts (can use rotisserie chicken)
1 c. fresh corn or frozen

  1. In large pan, drizzle bottom with olive oil and put over medium heat.
  2. Add asparagus and onion and cook, stirring for 3-4 minutes or until tender.
  3. Stir in flour, seasonings until blended.
  4. Gradually stir in broth and half and half.
  5. Bring to boil, stirring constantly, cook and stir for 3-5 minutes or until slightly thickened.
  6. Add chicken and corn and heat through.
  7. Taste for seasoning.
