Ingredients
  • 1 ½ c. sugar
  • 1 ½ sticks butter, melted
  • 2 c. mashed overripe bananas (this will be about 6)
  • 3 large eggs
  • 2 ¾ c. flour
  • 2 ½ t. baking soda
  • 1 t. salt
  • 1 c. mini chocolate chips
Instructions
  1. Preheat oven 350. Line two 12-c. muffin tins with paper or foil liners.
  2. In large bowl, combine sugar, melted butter, bananas and eggs. Mix well.
  3. In medium bowl, whisk flour with baking soda and salt.
  4. Add dry ingredients to wet ingredients and whisk until batter is evenly moistened.
  5. Stir in chips.
  6. Spoon batter into prepared muffin cups.
  7. Bake for 25-28 minutes, until toothpick inserted in center comes out with few moist crumbs.
  8. Let muffins cool for 10 minutes before turning them out onto a rack to cool completely.
Notes
*****Muffins can be wrapped in plastic and placed in ziplock bags and frozen for 1 month. Let thaw and toast in 350 oven.
You can also add chopped nuts and coconut.
