Cheesy Quinoa Chicken Appetizer Balls
1 c. cooked quinoa
1 c. shredded chicken
¼ c. goat cheese
¼ c. sharp cheddar cheese
¼ c. buffalo wing sauce, your favorite
¼ c. Panko breadcrumbs
1 large egg, beaten
2 T. flour, regular or whole-wheat
Salt and black pepper to taste
DIPPING SAUCE:
1 c. Greek yogurt
¼ c. blue cheese
½ t. garlic powder
½ t. dried dill
½ t. dried parsley
½ t. crushed red pepper flakes
Salt and black pepper to taste
1. DIPPING SAUCE: In a bowl, combine all the ingredients. Mix well, taste for seasoning. Refrigerate until ready to use.
2. Preheat oven 350.
3. Lightly oil mini muffin pan or spray with PAM.
4. In large bowl, combine quinoa, chicken, the cheeses, buffalo sauce, Panko, egg, flour, salt and black pepper to taste. Mix well.
5. Using a small cookie scoop, scoop mixture evenly into muffin tray (about 1 ½ T. for each).
6. Place in oven and bake 15-20 minutes or until golden and set.
7. Serve with dipping sauce.
*****After baking, you can place in Ziploc bags and freeze. Then either defrost or place in dish and cover and warm in oven until hot.
