Cheesy Quinoa Chicken Appetizer Balls
Ingredients
- 1 c. cooked quinoa
- 1 c. shredded chicken
- ¼ c. goat cheese
- ¼ c. sharp cheddar cheese
- ¼ c. buffalo wing sauce, your favorite
- ¼ c. Panko breadcrumbs
- 1 large egg, beaten
- 2 T. flour, regular or whole-wheat
- Salt and black pepper to taste
- DIPPING SAUCE:
- 1 c. Greek yogurt
- ¼ c. blue cheese
- ½ t. garlic powder
- ½ t. dried dill
- ½ t. dried parsley
- ½ t. crushed red pepper flakes
- Salt and black pepper to taste
Instructions
- DIPPING SAUCE: In a bowl, combine all the ingredients. Mix well, taste for seasoning. Refrigerate until ready to use.
- Preheat oven 350.
- Lightly oil mini muffin pan or spray with PAM.
- In large bowl, combine quinoa, chicken, the cheeses, buffalo sauce, Panko, egg, flour, salt and black pepper to taste. Mix well.
- Using a small cookie scoop, scoop mixture evenly into muffin tray (about 1 ½ T. for each).
- Place in oven and bake 15-20 minutes or until golden and set.
- Serve with dipping sauce
Notes
*****After baking, you can place in Ziploc bags and freeze. Then either defrost or place in dish and cover and warm in oven until hot.
