Ingredients
  • 8 (1/2” thick slices) of good crusty bread
  • Extra virgin olive oil, for brushing
  • 1 (1-1 ½ lb.) fresh eggplant, sliced crosswise, 1” thick
  • Kosher salt, fresh ground black pepper
  • 4 ripe plum tomatoes, sliced crosswise, ¼” thick
  • ½ lb. good quality fresh mozzarella, sliced ¼” thick
  • 8-10 large basil leaves, torn
  • Marinara sauce, optional
Instructions
  1. Light a grill. Brush bread with olive oil on both sides and grill over high heat until crisp on outside and still soft inside. Takes about 30-45 seconds per side. Transfer to serving platter.
  2. Brush eggplant slices with olive oil on both sides and season with salt and pepper.
  3. Grill over moderate heat until charred on bottom, the turn and grill until tender. About 3-5 minutes on first side and then another 3 minutes on other side.
  4. Top eggplant with tomato, cheese and basil.
  5. Cover grill and cook until cheese melts.
  6. Transfer eggplant to bread.
  7. Sprinkle with a little more salt and pepper.
  8. Heat marinara sauce and serve on the side, optional.
  9. You can leave off the tomatoes and change up the cheeses if you like.
