Cheesy Grilled Eggplant Sandwiches
Ingredients
- 8 (1/2” thick slices) of good crusty bread
- Extra virgin olive oil, for brushing
- 1 (1-1 ½ lb.) fresh eggplant, sliced crosswise, 1” thick
- Kosher salt, fresh ground black pepper
- 4 ripe plum tomatoes, sliced crosswise, ¼” thick
- ½ lb. good quality fresh mozzarella, sliced ¼” thick
- 8-10 large basil leaves, torn
- Marinara sauce, optional
Instructions
- Light a grill. Brush bread with olive oil on both sides and grill over high heat until crisp on outside and still soft inside. Takes about 30-45 seconds per side. Transfer to serving platter.
- Brush eggplant slices with olive oil on both sides and season with salt and pepper.
- Grill over moderate heat until charred on bottom, the turn and grill until tender. About 3-5 minutes on first side and then another 3 minutes on other side.
- Top eggplant with tomato, cheese and basil.
- Cover grill and cook until cheese melts.
- Transfer eggplant to bread.
- Sprinkle with a little more salt and pepper.
- Heat marinara sauce and serve on the side, optional.
- You can leave off the tomatoes and change up the cheeses if you like.
