Ingredients
  • 2 (8.5-oz.) box Jiffy Cornbread mix
  • 2 eggs
  • ⅔ c. milk
  • 1 (15-oz.) can Kuner’s Southwest Corn and Peppers, drained
  • 1 (8-oz.) package grated Mexican blend cheese
  • 1 bunch chopped cilantro or green onions
  • 1 stick melted butter
Instructions
  1. Spray your 11x9” baking dish with PAM. Preheat oven 400.
  2. In a bowl, add eggs and milk. Whisk until blended.
  3. Add the cornbread mix to the egg mixture and stir by hand.
  4. Add the drained corn, cheese and cilantro and mix well.
  5. Pour into baking dish.
  6. Bake 10-15 minutes, until golden brown around edges and center is not too soft.
  7. Remove from oven.
  8. Melt butter and with a brush baster, spread butter over the top before serving.
