Cheesy Corny Cornbread
Ingredients
- 2 (8.5-oz.) box Jiffy Cornbread mix
- 2 eggs
- ⅔ c. milk
- 1 (15-oz.) can Kuner’s Southwest Corn and Peppers, drained
- 1 (8-oz.) package grated Mexican blend cheese
- 1 bunch chopped cilantro or green onions
- 1 stick melted butter
Instructions
- Spray your 11x9” baking dish with PAM. Preheat oven 400.
- In a bowl, add eggs and milk. Whisk until blended.
- Add the cornbread mix to the egg mixture and stir by hand.
- Add the drained corn, cheese and cilantro and mix well.
- Pour into baking dish.
- Bake 10-15 minutes, until golden brown around edges and center is not too soft.
- Remove from oven.
- Melt butter and with a brush baster, spread butter over the top before serving.
