Cheesy Cocktail Crackers
Ingredients
- 4.5 oz. good quality blue cheese (no crumbles)
- 3 T. butter, cold
- ½ c. flour
- 3 T. cornstarch
- ¼ t. kosher salt
- Freshly cracked black pepper to taste
- 2 t. Worcestershire sauce
- ¼ t. garlic powder
- Additional kosher and black pepper for sprinkling
Instructions
- Combine the cheese, butter, flour, cornstarch, salt, pepper, Worcestershire and garlic powder in a food processor.
- Process until dough comes together in a ball.
- Wrap dough in plastic wrap and refrigerate for at least 2 hours.
- Preheat oven 375.
- Line baking pan with parchment paper.
- Roll chilled dough out to about ⅛” thickness between sheets of parchment paper or wax paper.
- Cut into 1” squares with pastry wheel or pizza or cookie cutters.
- Transfer crackers to baking sheets and sprinkle with additional salt and pepper.
- Bake for 10-12 minutes or until golden brown and crisp.
- Let crackers cool completely before placing in air-tight container.
- Will keep at room temperature for 3 days or freeze for longer.
Notes
*****This makes about 5 dozen. The color of the dough will be odd in its cadet blue but bakes up to a golden brown.
