Cauliflower Drizzled with Cheese Sauce
Ingredients
- 1 large cauliflower
- 2 c. water
- PAM
- Olive oil
- 2 T. minced bell green pepper
- 1 T. minced onion
- 2 T. butter
- 2 T. flour
- 1 c. skim milk
- 6 slices of American cheese, cut into strips
- ¼ t. dry mustard
- ¼ t. ground white pepper
- Salt and black pepper to taste
- 1 T. chopped fresh parsley
Instructions
- Remove and discard outer leaves and stalk of cauliflower. Wash, leaving head whole.
- Place cauliflower in large saucepan and add water. Bring to a boil, cover, reduce heat and cook 10 minutes or until tender. Drain well. Place cauliflower on serving platter and keep warm.
- Coat skillet with PAM. Drizzle with olive oil and over medium heat, add green pepper and onion and sauté until tender. Set aside.
- Melt butter in heavy sauce pan over low heat, add flour, stirring until smooth. Cook 1 minute, stirring constantly.
- Gradually add milk, cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
- Add cheese, mustard and pepper and salt. Stir until cheese melts. Taste for seasoning.
- Remove from heat and stir in veggie mixture.
- Spoon sauce over top of cauliflower and sprinkle with parsley. Serve immediately.
