Ingredients
  • 1 lb. butternut squash (already peeled, seeded and cut into cubes) if not buy 1 large whole one and peel, seed and cut into cubes
  • 1 vidalia onion, chopped
  • 1 large green bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 T. minced garlic
  • 1 (16-oz.) can diced tomatoes
  • 1 (8-oz.) can tomato sauce
  • 1 (6-oz.) can tomato paste
  • 1 T. dried oregano
  • 1 T. dried basil
  • Salt, black pepper, garlic powder
  • 1 c. elbow or shell pasta
  • 1 c. mozzarella cheese
Instructions
  1. Place the squash and all the ingredients except pasta and cheese in crock pot.
  2. Cook on LOW for 6 hours.
  3. Add in pasta and cook on LOW for 2 more hours.
  4. Add cheese. Serve when cheese begins to melt
